Walter Bibo, the founder of BIBO RUNGE, and Markus Bonsels create still and sparkling wines with very long maceration times, extracting the maximum flavor and aromas from our grapes and then gently pressing the mash in a champagne press. We ferment each of our wines with natural yeasts in oak casks, letting them ferment as slowly and naturally as possible. That’s how we create wines that have been given time to find themselves: wines that are strong in character and self-confident, wines that you can simply enjoy.
